Brian,
Did you ever try to adjust the placement of the shifter or the rear break
pedal? When I first bought my ST, I the exact same experience with the
shifter. I'm an even six feet with about 80% of my height in my legs (OK,
so I'm exagerating, but suffice to say, I'm quite leggy). Anytime I wanted
to down shift, I was straining to lift my toe just get on top of the
shifter.
I'm at work (and drove the cage today), so it is hard to describe exactly
how I did it, but I was able to lower the resting height of the shifter so
that I can rest the toe of my boot on top of it, and my heel on the footpeg,
without any effort going into lifting my toe. I wouldn't be surprised if
the rear break pedal has a similar adjustability.
The axle that the shifter connects to is notched. I marked the original
placement with a grease pencil (once off, it is easy to lose track of where
it started), pulled off the connector, and then moved it one notch in the
direction I wanted. I tried it out at that point, and it worked fine. You
could easily move it a second notch to give even more play.
If you're interested, I'll try to take a look at it tonight and give you a
more accurate description.

Also, the problem is that my legs were so doubled over that I could
not get my foot over the rearbrake or shifter without taking my foot
off the peg by lifting my whole leg. This is quite unsettling in a
turn. I got over this by never using the rear, except on low-speed
sand or gravel, and never downshifting, which, fortunately, the ST has
no problem with. ;)

Maybe there are other tall sprint riders who have solved this problem?
