Ask yourself the following questions:

Do I want a more prone racing riding position, or a more upright
touring riding position?

Do I want hard luggage designed for the motorcycle, or not?

Do I want more torque down low, or more top end horsepower?

ST: more upright, hard luggage, more torque down low.
Daytona: more prone, no hard luggage, more top end horsepower.

I bought the ST, and at the time fretted about not going for the
extra horspower, but took some solace in the torque curve.  I
haven't regretted it, as the ST has more horsepower than I am
likely to use, and I have fallen in love with the torque curve.  

The riding position is also a big plus for me, and I have added
the GenMar risers to make it even more upright.  The air coming
over the windshield now takes all the weight off my hands at
about 60-65, which is perfect for me.
