running in

I know the saying says "run them in hard and they will go hard" "Run them in
long and "Triumph correct" for a long life.
Can anybody tell me what actually happens inside the engine to make the two
engines perform differently.
Just curious because I ran my bike in the so called correct way, now after
riding a demo bike the same as mine,( yes it was the same colour), it out
performed mine greatly. It did have the carbon Triumph pipe on, Could this
make such a difference.?
